If there was one thing that was exciting in the otherwise dull and drab 2017, it was the food scene. While the country and the world at large was drowning in the depressing news cycle, good and comforting food kept us going.

That's the thing about food, isn't it? It has the ability to pull us out of anything and put a smile on our face.

Whether it was the regional food, eating local, fermented food or home chefs - 2017 gave us a lot to be content about when it came to food.

We don't know what the news will offer in 2018 but we are fairly sure of the good food that's coming our way. We’ve put together some interesting food trends to watch out for in 2018, so roll up your sleeves and get ready for a delicious ride.

Buddha Bowls

Buddha Bowls have taken Instagram by storm. And apart from the avocado and fancy western versions, they are the perfect way to uplift our everyday Indian comfort food. Come to think of it, this is how we have eaten all our lives.

Some carbs with roti/rice, a dal, a sabji, simple salad and some meat if you are a non-vegetarian. All laid out in a thaali and mixed up while eating. 

End of 2017 saw Buddha Bowls making an appearance during festivals in restaurants like SBOW, Monkey Bar. I think the trend is here to stay.

Superfoods

Well technically the word ‘superfood’ is a contradiction in itself but then we humans are easy marketing targets.

Whether it is matcha, moringa, chia seeds or even edible charcoals and black colored foods. Superfood powders and extracts are going to change how our food is served.

Going Back to Our Roots

Regional food ruled the eating scene in 2017 and I think it will continue to do so in the coming year. But, regional food will get a makeover in this year.

2018 will be about taking food from our roots, our regional flavors and dishes and presenting it to the larger audience in a refined manner while still keeping the soul of the dish true. 

I see grains like millet taking over from quinoa. The focus will be on native ingredients and cooking techniques. 2018 will be a year where thaalipeeth, home chutneys and podis will find their way into restaurant menus.

Private Dining and Home Chefs

We are in a place where people are looking for authentic dining experiences. We aren't satisfied with the macher jhol we eat, we want the best macher jhol that Mashi Ma makes in entire Kolkata.

And home chefs are making this happen.

Whether it is the Bohri meal that is almost impossible to find or that Mudliaar mutton curry, home chefs are eager to pass the love of the family recipes and with consumers eager to taste, this is going to be win-win for all of us.

Wholesome Healthy Food

And we aren't talking just about calorie counts. 2017 started a trend of wholesome eating and that is only going to get stronger in the coming year.

Today's diner is aware and conscious of what s/he is eating and in 2018 we will see wholesome healthy food beyond fad diets coming to the front.

And while these foods keep us happy, I hope we aren't going to see the tall and oh so tough glass of freakshake again in 2018!
